
We are proud to use ingredients that have been grown and sourced from our own grounds.
Using Welsh and local businesses to source seasonal produce and ingredients has always been important to us, but we are especially pleased to be using ingredients that have been grown on site, specifically in B-Leaf.
B-Leaf is a work-based initiative for adults with learning disabilities, based within the grounds of Bryngarw Country Park.
Used in a variety of dishes across our menus are exotic oyster mushrooms, cultivated and grown by trainees in B-Leaf as part of the 'Madarch Bryngarw/Bryngarw Mushrooms' initiative.
Apples from the B-Leaf orchard are also used in a number of ways, including in our deconstructed apple crumble, apple gel, apple crisps, pan seared apples infused with Penderyn whiskey and apple juice.
In hopes to expand on what they can grow and offer, trainees are currently working on a new herb garden and vegetable patch. We are looking forward to sampling some of the produce when it is up and running in the future.
We are also pleased to source honey from Bridgend Beekeepers Association who operate from the grounds of B-Leaf, our chef added that "it has a wonderful colour, tastes amazing and is right on our doorstep".
As well as supporting these organisations that operate within our own grounds, sustainability is one of our core values; we hope to reduce Co2 emissions by reducing our food miles.
